Op-Amps and accelerometers

I've been considering amplifying and filtering signals from a 5V analog accelerometer, using op-amps.
There is less documentation about amplifying DC signals, or about filtering low frequency signals like in a seismometer.
I have a signal that centers on about 2.2V, not exactly 2.50V.
I can make a reference voltage at that middle, for the positive input to my amplifier. I'm afraid the center of the accelerometer might shift, however—It'd be nice to be able to have the reference voltage be the average of the recent signal—A differential amplifier around 1Hz.
I've been studying the LM358 datasheet.
